Plain old roasted peanuts are best for this recipe. The skin will separate from the nuts as you stir them into the chocolate mixture and will add an unpleasant texture. The filling will be smoother if you sift the powdered sugar before you use it.The bars must be made ahead of time because it takes time for the whole thing to set up. But you can serve 18 to 20 people with this recipe, and it is so spectacularly indulgent that it’s worth every penny. The ingredients for this recipe are pretty expensive: it costs about $12 for all of them. The bars do freeze, but I think they are better when freshly made. This makes a huge pan of bars, so it’s best to make it when you are expecting company or at Christmas. And add a bit of peanut butter to the filling for extra smoothness and a bit of flavor boost.
